Healthy Spring Pasta at Home

Lemon Primavera Pasta

INGREDIENTS:

1½ Tbsp Olive Oil
1½ tsp Grated Lemon Peel
1½ cups Broccoli Florets
¾ tsp Dried Basil
2 cloves Minced Garlic
¼ tsp Dried Oregano
¾ cup Julienned Zucchini
2 Plum Tomatoes, seeded and diced
½ cup Julienned Carrots
6 oz Linguini, cooked
¼ cup Honey
Salt & Pepper, to taste
½ cup Lemon Juice
Grated Parmesan Cheese

COOKING DIRECTIONS:

Heat oil in a large skillet over medium high heat until hot. Add broccoli and garlic, then stir fry for 2 minutes. Add zucchini, carrots, honey, lemon juice, lemon peel and seasoning, then stir fry another 5 minutes, or until vegetables are tender crisp. Reduce heat to low, add tomatoes and simmer for 5 minutes. Toss with noodles, salt and pepper to taste and sprinkle with Parmesan cheese. Can be served hot, cold or at room temperature.

HELPFUL TIPS:

Although this doesn't have meat, it is filling and can serve as an entree. Sometimes for festive occasions, I add a pound of cooked shrimp, but I cook them separately and add them just prior to serving. We like it both ways.
