If Mark Cuban became an owner of the Dallas Cowboys, fans would almost certainly have fun with nicknames like "The Cuban Cowboys" or "Cuban's Cowboys." But officially, the team name would not change.
The Dallas Cowboys brand is one of the most valuable and recognizable in sports. Even if Cuban bought a significant stake, or eventually became the controlling owner, the franchise would almost certainly remain the Dallas Cowboys, just as:

So "Cuban Cowboys" would be more of a media headline or fan nickname than an actual rebranding.
That said, if Cuban ever took control, people would probably expect some noticeable changes in how the franchise is run, he's known for being a very hands-on owner and embracing technology and fan engagement. Whether that style would mesh with the Cowboys' culture is a separate question, but it would certainly make for an interesting NFL storyline.
